Meet the Pit Master

Paul Walerczak and his wife Lisa live in Southern Indiana.  They have been married for 30 years.  They have been blessed with eight children and currently have four grandchildren.  

​

In addition to being the owner/operator of Triple-T Barbeque and Catering, Paul is a full time pastor.

The Story Behind the Smoke

​

For me, barbecue didn't begin with a smoker.  It began with family.

 

My dad was born and raised in Poland, where his father worked as the head of a meat-processing facility. My grandfather was a true craftsman when it came to meat. He created incredible European-style sausages, smoked meats, and traditional dishes that reflected generations of knowledge and experience.

When my grandparents would visit us in the United States, I spent countless hours alongside my grandfather. As a young boy, it was completely normal for me to be helping him process venison, deer, pork, or beef.  We then turned that meat into amazing sausages and smoked products.  I didn't realize it at the time, but those were some of the first lessons I would ever receive about food, craftsmanship, and the importance of doing things the right way.

Then there was my dad.  Dad was the king of the backyard barbecue and the life of most gatherings!

He loved cooking over charcoal, and as a kid and teenager, I spent a lot of time watching, helping, and learning from him. I picked up the little tricks and techniques that only come from experience—the kind of things you don't necessarily learn from a recipe.

Those early experiences planted something in me that would stay there for years.

​

From the Cockpit to a BBQ Pit

My early adult career took me in a completely different direction.  I became a corporate pilot for a Fortune 500 company based in Indiana. Flying took me all over North America, and while I was traveling, I discovered another way to pursue my passion for barbecue. I ate it! Lots of it!

​

Every region seemed to have its own interpretation of what great barbecue should be. Carolina, Memphis, Kansas City, Texas, and everywhere in between—I appreciated what each region brought to the table.

 

But there was something about Texas barbecue that kept calling me back.

The simplicity.

The fire.

The smoke.

The patience.

The craftsmanship.

The idea that you could take a great piece of protein, season it properly, give it time over a carefully managed fire, and create something extraordinary.  Texas-style barbecue became my passion.  And when I wasn't flying, I was experimenting.

 

I spent a lot of time working to understand the process and refine my own techniques, trying to recreate the barbecue I had experienced while traveling through Texas and even applying things I learned as a child from my grandfather and father.  I wasn't simply trying to copy what I had eaten.  I wanted to understand why it worked.  Over time, that pursuit became a passion.

​

A New Chapter.

In 2016 I left corporate aviation after contracting Lyme disease and losing my medical.   At that time I entered full-time vocational ministry.

​

My career had changed, but my love for cooking never left.  In fact, barbecue became something I could use to bring people together.  At church gatherings, men's events, pot lucks, and at other fellowship opportunities,  people began experiencing the food I was cooking. Eventually, I started hearing the same thing over and over:  "You know you could sell this food".

​

In 2023, Triple-T Barbeque & Catering was born.  Triple-T started as a conversation in a garage between myself and a close friend.  What started as a passion for creating great Texas-style barbecue became something bigger.  Because Triple-T Barbeque isn't really just about barbecue.

It's about people.

It's about gathering around a table.

It's about serving your family and friends.

It's about sitting around the fire and taking the time to enjoy one another.

It's about the conversations that happen while the meat is smoking and the memories that are created when people gather together.

​

And for me, those things are deeply rooted in something even bigger:

Faith. Family. Fellowship.  Those are the values at the heart of Triple T. 

​

That's why Smoke'n with a Purpose™ isn't just a catchy phrase we put on a shirt or a bottle.

It's the lifestyle behind Triple-T Barbeque and Catering.  It's a reminder that what we do matters because who we do it with matters even more!

​

Whether we're catering a gathering, firing up the smoker for friends, developing a new rub, or simply standing around a backyard grill with family, the goal is the same:

Honor God.

Make great food.
Serve people well.
Build relationships.
Create memories.

​

My grandfather taught me that great food requires craftsmanship.

My dad taught me the joy of cooking over a fire.

My years on the road taught me to appreciate the incredible barbecue traditions found across this amazing country.  And my life today has taught me that the greatest things in life are absolutly meant to be shared.

​

That's the story behind Triple T Barbeque and Catering.  It's a story that started generations ago, traveled through tens of thousands of miles of sky, and eventually found its home around a smoker in Southern Indiana.

​
